Mashed Potato Cheese Soup

Ingredients

6 tbsp butter
6 tbsp flour
6 cups milk
4 to 6 oz of medium or sharp cheddar
8 to 10 small to medium russet potatoes
1/2 tsp garlic powder
1 tsp onion powder
1 tsp salt
1 tsp white pepper
1/2 tsp black pepper

Preparation

Mashed potatoes:
Skin and boil potato chunks.
Warm 6 cups of milk on low heat
When the potatoes are done, drain and combine with 2 cups of the milk. Mash them taters!

Bechemel sauce:
Melt butter in deep pot
Add flour slowly while constantly whisking
Once rue forms add the remaining milk slowly whisking constantly
Once the bechemel has formed add the the spices and the shredded cheese in small batches and stir in.

Combine the mashed potatoes and cheese sauce.

Makes 6 to 8 servings

Ddys Fantastic Skillet Beans

Ddys Fantastic Skillet Beans

Ingredients:
2 15 oz. great northern beans
1 15 oz black beans
1/2 t. salt
1/2 t. black pepper
1 t. cinnamon
1 t. cumin
2 t. smoked paprika
3/4 c. diced carrots
3/4 c. diced onion
1/4 c. diced green pepper
1/4 c. medium salsa
1/4 c. brown sugar
1/4 c. half and half
1 T. olive oil

Saute the onions, green pepper and carrots in olive oil until the onions are starting to clear.  Excepting the half and half, add the rest of the ingredients and simmer for 1 hour.  Stir in the half and half and let it simmer for another 5 minutes and you are ready to eat.

Enjoy.

Bran Muffins

Bran Muffins                      Bake 400 degrees

                                  20 to 30 minutes

 

 

½ c  whole wheat flour

½ c  white flour

1 ½ tsp. baking soda

1 ¼ c bran

½ c raisins

1 egg

1/3 c honey

1 c milk

2 Tbsp soft butter

2 bananas, mashed

 

Combine butter, honey and egg.  Add other ingredients, with the mashed bananas last.  

Grandma’s Spaghetti Sauce, Meatballs, Lasagna

Grandma's Spaghetti Sauce

4 cloves garlic, minced
1⁄2 onion, diced
1 large cans tomatoes, pureed or diced
1 small can tomato paste
1⁄2 tsp salt
handful of basil, fresh, or frozen
1⁄4 hot Italian pepper
pork neckbones, porkchops, Italian sausage or meatballs
olive oil

Put tomatoes, paste, salt, hot pepper, and basil in pot to simmer.
Saute onion and garlic in hot oil, lift out of oil and add to tomatoes.
Brown, pork, meatballs, Italian sausage, and lift out of oil and add to tomatoes.
Simmer at least an hour so meat finishes cooking.


Meatballs

1 lb ground chuck
1 egg
2-3 cloves garlic minced
parsley, fresh
1⁄2 tsp. salt
1/3 cup romano cheese

Roll into 1 1⁄2 inch balls and brown in hot oil. When they are very brown on one side, turn with a teaspoon. When they are browned on the other side, remove from oil and put into sauce.

Lasagna

1 lb lasagna noodles, cooked
1 container ricotta cheese
1 egg
grated romano
mozzarella cheese, grated
1 egg
mint, dzenzevida (sp)
parsley
salt

Layer in pan
sauce, noodles, ricotta mixture, romano sprinkled, mozzarella, sauce etc.

Bake 20-30 min. 350 degrees

Grandpa Eugene Meyers Stolen

1 lb sugar

1 lb butter, 1⁄2 of this Crisco

1 oz salt

6 eggs

1 qt milk

1⁄2 lb yeast

2 Tbsp vanilla

5-6 lbs flour

1 1b citron 

1 1b lemon

1 1b orange peel ( you may also use candied cherries and nuts )

Dissolve 1⁄2 lb yeast in heated milk, ( just to very warm). In a bowl cream the sugar, 

butter/Crisco, Add salt and 6 eggs. Add the warm milk to dry mixture a little at a time. 

Add 2 Tb vanilla. Dust the fruit with half of the flour and then add the flour to make a 

stiff dough. 

Let dough rise double in lightly greased bowl, covered with a towel, about 1 hour.

Punch it down and let it rise again, about 1 hour.

Cut into 1 lb pieces, flatten into a circle, pat some butter on half and fold over to almost 

half.

Put on cookie sheet and let rise covered until double in size. Bake on cookie sheet about 

35 minutes in a 350-375 degree oven. 

Sprinkle with powdered sugar.

Makes 12 lbs

Grandma Meyer’s Peanut Butter Cookies

Grandma Meyer's Peanut Butter Cookies

Makes 8 dozen

1 c shortening

1 c white sugar

1 c brown sugar

1 tsp vanilla

2 beaten eggs

1 c peanut butter

3 c flour

2 tsp baking soda

Dash salt

Thoroughly cream shortening and sugars. Add vanilla and eggs. Stir in peanut

Butter. Mix well. Stir flour and baking soda into creamed mixture.

Form into tiny balls. Place on ungreased cookie sheet. Press with back of fork

To make a cross. Bake in 375 degree oven for 10 minutes.

1 c sugar

1 T butter

2 eggs

1 T hot H2O

1 c flour

1 T baking powder

1/8 tsp salt

1 lb dates, or 2 2/3 c cut into small pieces

1⁄2 c chopped nuts

Bake in a 9x12 pan 

350 degrees

25 min

Cut into squares and roll or sprinkle with 

confectioners sugar

Crust 

1 c flour

1-3 oz cream cheese

¼ lb Oleo….yuck I would so use butter.

Mix together. Separate into 24 balls. Press into tart pans.


Fillling

¾ c brown sugar firmly packed

1 T melted butter.

1 egg

1 c chopped walnuts

Dash of salt

A few drops of vanilla


Spoon into cups.  Bake 25-30 min at 350 degrees.

When cool sprinkle with powdered sugar.
